i had a
craving for some
fresh veggies
and protein,
so i made
grilled chicken
breast and a salad
for dinner.
marinated in
olive oil and minced
garlic, the chicken
breast was nice
and juicy.
on the side,
was a salad made
of chopped kale,
mozzarella pearls,
tomato, bell pepper
and chili powder.
i never knew that
chili powder
and tomato make
a power couple!
the leftover chicken
will be shredded and used
for the next blog post.

good eats
ahhhhh. time to relax!
'weekend' will forever be my most used and favored vocabulary word.
the weekend provides the perfect opportunity to really taste life.
savor the way happiness slowly melts on your tongue and seeps into your body.
i loooove you weekends! <3
so to end this eventful week
and start a utterly relaxing weekend,
dinner was served.
salmon croquettes with wild basmati rice and sauteed bell peppers. YUM.
salmon croquettes (serves two)
- two cans wild alaskan salmon (costco)
-two eggs (farm fresh!)
-rolled oats ( 1/8 of a cup)
- 1/4 cup diced onion
- 2/3 cups wild basmati rice
mix said ingredients in a bowl. form little patties and cook on heated pan. cook until preferred toughness is accomplished!
cook rice according to directions.
saute peppers with lemon juice
plate all ingredients and enjoy!
