while shopping
at Costco the
other day, i
came across
a refrigerated
vat of wild
salmon.
i peeked to
my left to make
sure it wasn't a mirage.
nope, two
other customers
were examining
the filets as well.
you would think
that in a world
wear organic is
a rising trend,
finding wild
caught fish wouldn't
be a problem.
it is.
i don't dig
farm-raised
anything for
that matter, so
you can imagine
my excitement
at this discovery.
i greedily
grabbed three
and sprinted off
to my cart like
a football
player.
last night,
i made broiled
chili/herbs de provence rubbed salmon
with a huge
wok filled with
summer veggies.
the spice rub
makes me drool just
thinking about it.
it caused the fish
to form a beautiful
crisp layer that
hid soft lovely
fish beneath.
if you make this,
be sure to hit it
with some tabasco,
it makes the flavors
of the fish and spices
open up.
i will definitely
make this again...
maybe with
a fresh pico de gallo
style salsa?

chili and herb de provence rubbed salmon

good eats
ahhhhh. time to relax!
'weekend' will forever be my most used and favored vocabulary word.
the weekend provides the perfect opportunity to really taste life.
savor the way happiness slowly melts on your tongue and seeps into your body.
i loooove you weekends! <3
so to end this eventful week
and start a utterly relaxing weekend,
dinner was served.
salmon croquettes with wild basmati rice and sauteed bell peppers. YUM.
salmon croquettes (serves two)
- two cans wild alaskan salmon (costco)
-two eggs (farm fresh!)
-rolled oats ( 1/8 of a cup)
- 1/4 cup diced onion
- 2/3 cups wild basmati rice
mix said ingredients in a bowl. form little patties and cook on heated pan. cook until preferred toughness is accomplished!
cook rice according to directions.
saute peppers with lemon juice
plate all ingredients and enjoy!
needless to say, it was fantastic.
